Khoka Tiramisu
Khoka Tiramisu
6 extra large egg yolks
1/2 cup sugar
1 ½ cups special brewed Khoka coffee (read below)
1/2 cup dark rum, divided
16 ounces mascarpone cheese
30 Italian ladyfingers
Shaved bittersweet chocolate
Cocoa Powder (optional)
Special Brew Khoka Coffee:
7 tablespoons of Khoka Gourmet Coffee (for best flavor use- Smooth & Sweet) for 1 ½ cups of water (preferably prepare in a stovetop espresso maker, if not regular coffee maker is fine)
Instructions:
- Whisk egg yolks and sugar in the bowl of an electric mixer for 5 minutes until it gets very thick. Lower the speed and add ¼ cup of rum, ¼ cup of Khoka Special Brew and the mascarpone. Whisk until smooth.
- Combine the remaining ¼ cup of rum and 1 ¼ cups of special brew Khoka Coffee in a bowl (please note that it is important to combine this all in one time before dipping). Dip one side of ladyfinger in the special brew Khoka coffee mix and line the bottom of a 9x12x2 inch pyrex.
- Pour half of the Khoka Coffee cream mixture evenly on top of the ladyfingers and dip one side of the remaining ladyfingers in the special Khoka brew – rum mixture and place them in a second layer in the dish. Pour the rest of the special brew cream over the top. Smooth the top and cover with plastic wrap. Refrigerate overnight.
- When serving, sprinkle the top with shaved chocolate and cocoa powder for best presentation and taste.
